Below are links to companies that sell vegan chocolates in a variety of forms: chip, bar and pistol. Page 48 of the cookbook not only explains how to choose the proper chocolate, but as much of the chocolate called for in the cookbook is to be used as a coating, it also explains how to use vegan ​baking chocolate chips (which can easily be found in most grocery stores) by first thinning it with either primate-labor friendly coconut oil or food grade cocoa butter.

Sunspire Chocolate - Semisweet Baking Bar, Grain Sweetened Dark Chocolate Baking Chips, Organic Fair Trade 42% Cacao Semisweet Baking Chips, and the Organic Fair Trade 65% Cacao Bittersweet Baking Chips are vegan.

Callebaut - Dark Chocolates are vegan.

Artisan Kettle - Organic semisweet mini-chocolae chips are vegan.

Zotter Chocolates - Dark chocolates are vegan.

Amor di Mona - All chocolates are vegan.

Bouga Cacao Primate Friendly Chocolate - Vegan dark chocolate in a variety of flavors (learn more about this chocolate here)

Guittard - The company states: "Yes, our sugar is processed with bone char, however, all of the sugar used in our organic products are not." Those chocolates can be found here and here.

TCHO Chocolate - TCHO's Organic 66% Dark Chocolate Baking Drops 8oz are vegan (their others contain bone-char sugar). Note that while they are listed as “Baking Disks” as opposed to Couverture, they work very well for coating candies. 

Valrhona - I received this response from Valrhona after inquiring about the veganocity of their chocolates: "Thank you for your interest in Valrhona Chocolates. Our dark chocolates are vegan based on their ingredients, but we are not able to obtain vegan verification due to milk traceability from operating in the same factory as milk and white chocolate production. We utilize beet sugar not bone char.”
